APPELLATION GIGONDAS CONTROLLEDGEOGRAPHICAL SITUATION: extreme north of the appellation. Terraces located at the localities “Poncet, Thomas, Les Pallières and Terrasse du Diable”. This selection plot comes from vineyards whose altitude is between 250 and 400 m. For the most part, these are independent plots, small in size and surrounded by woods.AREA: the estate has 135 ha in one piece, 25 of which are planted with vines and 110 in wood (pine and oak). For the “Terrasse du Diable” blend, around 40% of the vineyard surface are used.SOIL AND BASEMENT: the area is cultivated in terraced stairs on most from the surface, due to the very steep relief. The ground, partly covered with scree of rocks limestone from the Dentelles de Montmirail, is very shallow and rests on a very compact layer of red clay. The density of rockslides increases with altitude.GRAPES: grenache noir 90%, mourvèdre 5%, clairette 5%.AGE OF THE VINES: 45 years on average.VINIFICATION: manual harvest with double sorting in the vineyard, followed by a third sorting in the cellar, light crushing and selective destemming, traditional fermentation of 25 to 30 days in concrete and wooden vats at controlled temperatures.Pressing in a pneumatic press, systematic malolactic fermentation.AGING: 20 months in French oak barrels of 60 hectoliters.Bottling without fining or filtration.PERSONALITY AND AGING: in its youth, the “Terrasse du Diable” cuvée carries with it the minerality, the freshness and the sometimes too marked tannins of the terroirs altitude.
