GRAPES: grenache noir 80%, syrah 20%.
AGE OF THE VINES: 25 years on average.
VINIFICATION: manual harvest with double sorting in the vineyard followed a third sorting in the cellar. Light crushing and 100% destemming, fermentation traditional 20 to 30 days in concrete vats under controlled temperatures. Pressing in a pneumatic press, systematic malolactic fermentation.
MATURING: in 50 hectoliters casks.
Bottling with a light filtration at 1 year.
PERSONALITY: the nose is serious, deep, slightly liquorice.
In the mouth, we discover the spices of this land, mixed with scents of garrigue. The frame is beautiful, it is taut, elegant, upright,
we feel the freshness of the place. A real character.
