CHÂTEAUNEUF-DU-PAPE CONTROLLED APPELLATION
We use for its creation the production of young vines of less 30 years old, as well as older plots not located on the Crau and Piedlong plateaus.
AREA: 30 hectares.
GRAPES: grenache 80%, syrah 10%, mourvèdre 6% and cinsault 4%.
AGE OF THE VINES: 40 years on average.
VINIFICATION: harvested manually with a double sorting of the harvest in the vineyard, followed by a third sorting in the cellar. Systematic destemming, traditional fermentation in tanks of 25-30 days. Controlled temperatures. Pressing in a pneumatic press, fermentation systematic malolactic.
AGING: 15 to 16 months in French oak casks of 30 to 60 hectoliters.
Bottling without fining or filtration. Marketed at 18 months.
PERSONALITY AND AGING: a Châteauneuf-du-Pape largely dominated by Grenache which gives it flexibility and a very particular roundness. To be enjoyed in its youth.
TASTING TEMPERATURE: 17 ° C.
